The food from Valencia is incredibly healthy and Valencia food recipes make full use of the abundance of fresh food grown in the region. Rice, fresh fish and seafood, meat and game, vegetables, fruit and of course olive oil and spices such as saffron give the food of Valencia it's unique flavor.
Valencia is the birthplace of paella and famous for the locally grown Valencia rice which the Moors introduced to the region.
The rice is small and round and used in the traditional Paella Valenciana, the ingredients of which depend entirely on the season you are in or your geographical location in Valencia.
If you're by the sea your paella will contain a lot of fish and vegetables as they are plentiful and come fresh from the sea. Further inland and chicken, rabbit and game are used as this is more plentiful to the area you're in. The traditional rice dishes of Valencia can be cooked in a paella pan, the oven or on top of the stove as a stew.
Paella is traditionally cooked outside on a barbeque for Sunday lunch or for special occasions... and then only for lunch!
Valencian tapas bars naturally contain the delicious tapas which Spain is so famous for such as calamares, empanadillas and of course the very traditional tortilla, and patatas bravas.
Other tapas which are also very popular, versatile and amazingly easy to make are anchovies and olives.
