Anchovies & Red Peppers

2 large red peppers 3 garlic cloves 4-5 tablespoons of olive oil 1 small can of anchovies
Method
- First you must heat the oven to 180 c (400F).
- Wash peppers, put in a dish and roast in the oven for about 10 - 15 minutes on each side (depending how large they are) then leave to cool down.
- Peel and remove seeds then cut into thin strips measuring about 1/2 inch.
- Heat oil in a frying pan.
- Flatten/squash garlic with a knife and add to oil.
- After a minute add the strips of red pepper and gently fry for another 7 - 10 minutes.
Serve mixed with anchoves - delicious hot or cold - by themselves or on top of crunchy bread or toast! Note: Anchovies and olives are quintissentially Spanish and 'tapenade' is another dish which is easy to make and incredibly delicious on crusty bread or toast (it's also extremely popular in France). Another way of serving anchovies is to marinate them. These tapas are called 'boquerones' and are one of the most popular tapas in Spain.
